Easy-to-make: Simple Immune-Boosting, Chicken Noodle Soup
My take on a clean, simple, immune boosting chicken noodle soup!
I woke up feeling completely under the weather the other day. My head was in a bubble and my chest felt really congested. Not the best feeling in the world. Not to mention the immense downpour in Vancouver too! Sick + rainy days call for comfort food. What better else than some immune-boosting, chicken noodle soup?
For years, I used to drink soup from a can, or a packet! (raise your hands for those Lipton lovers!!) but were those little pre-cooked powders really work? I mean, they were super delicious! I was reading the other day the benefits of bone broth – I guess now is the time to really try out it’s benefits!
What is bone broth?
In a nutshell, bone broth is broth made from healthy animal bones, herbs, spices + water. The long cooking process causes the nutrients and flavors to come out and is known for it’s immune – boosting, digestive – improving qualities. Exactly what this cold front (literally and in a medical standpoint) in Vancouver needs!
Check out below my simple take on an easy-to-make chicken noodle soup with homemade bone broth:
Ingredients:
- 1 onion
- A bunch of carrots
- 2 bay leaves
- 4 cloves of garlic
- 2 stalks of celery
- 2 tomatoes
- Ginger
- Chicken bones (I got mine from Whole Foods)
- Salt ‘n Pepa
- Coconut oil
- Mushrooms (if you prefer)
- Gluten Free Fusilli noodles
- Water
- Parsley

Ginger: Great for digestion, discomfort & nausea
Directions:
- Prep & chop all the ingredients into bite-sized cubes
- Throw the onions, garlic & ginger (I used a few slices) on the pan with olive oil, cook until soft
- Pat the chicken carcass dry (it’s not that bad!) and lightly sear the outer layer with the onion+garlic+ginger mix
- Set all the ingredients into a large pot, top with spices & seasonings
- Add about 2 litres of water, cook on high until it is boiling & slowly scrap off the floating bits
- Add another 2-4 litres of water (your preference) and cook on low for about 4 hours
- Add seasonings to taste, I wanted this version to be super light so I can snack on it all day!
