Buddha Belly!

Hello, friends!
Do you know where the “Buddha Bowl” came from? Apparently, it derived from a mishmash of ingredients that you find in your fridge and plate them together in a bowl that resembles the iconic buddha’s belly! They’re also known as hippie bowls or macro bowls! My trainer has taught me to practice eating certain types of foods at certain times of the day and the buddha bowl could not be a better fit for my lifestyle. Today, I present to you, one of my favorite versions of the Buddha Bowl!
THE SOBA BUDDHA BOWL:
Ingredients:
- Soba (buckwheat noodles)
- Brown Crimini Mushrooms
- Bok Choy
- Green Onion
- Tofu
- Panko breading
- Avocado
- Black & white Sesame Seeds
- Tamari
- Sesame Oil
- Dark Green Kale
- Grated Ginger
- Miso Paste
- Coconut Oil
Directions:
- Boil a small handful of soba noodles, drain & set aside
- Bread a few slices of medium-firm tofu with panko & grated ginger, fry on the frying pan with coconut oil
- In the same pan, lightly fry the mushrooms & bok choy. I like a slightly charred bok choy, so I threw my halved bok choy in the toaster oven for 10 mins on medium heat
- Slice avocado & chop the kale
- Chop green onion and mix lightly with white sesame seeds
- Mix miso, sesame oil and a touch of tamari together, use as dressing for the whole bowl
- My favorite part! Plate the bowl (be as creative as possible)
